水通过渗透作用移动。在高溶质环境中,水会从微生物细胞中流出,导致细胞脱水并抑制其生长。
水分活度用于衡量微生物可利用的水分,其值随渗透压升高而降低。
大多数微生物需要高于0.98的水活度,但有些微生物可以适应较低的水平。
嗜盐微生物在高盐环境中生长,通常在3–15%的氯化钠浓度范围内生长。像Halobacterium这样的极端嗜盐微生物则需要超过15%的盐浓度,并在20–30%的盐浓度下生长最佳。
嗜盐微生物通常能够耐受 0.1% 至 10% 的盐浓度。
