Die Oxidation organischer Verbindungen in Gegenwart von Luft oder Luftsauerstoff wird als Autoxidation bezeichnet.
Es handelt sich um eine Kettenreaktion mit freien Radikalen, die aus Initiierungs-, Fortpflanzungs- und Beendigungsschritten besteht.
Im Initiationsschritt abstrahiert ein Initiator Wasserstoff aus der organischen Verbindung, um ein kohlenstoffzentriertes Radikal zu bilden.
Das Radikal tritt dann in den ersten Vermehrungsschritt ein, wo es mit dem molekularen Sauerstoff koppelt und ein Peroxyradikal bildet.
Im zweiten Vermehrungsschritt abstrahiert das Peroxyradikal Wasserstoff von einem anderen organischen Verbindungsmolekül, wodurch das Produkt Peroxid gebildet und das kohlenstoffzentrierte Radikal regeneriert wird.
Das regenerierte Radikal setzt die Kettenreaktion weiter fort.
Im Abschlussschritt koppeln schließlich zwei kohlenstoffzentrierte Radikale zusammen, um ein nicht-radikalisches Produkt zu bilden.
In der Regel wird der Autoxidationsprozess durch Licht ausgelöst. In Abwesenheit von Licht ist der Prozess sehr langsam. Aus diesem Grund werden die meisten organischen Chemikalien in dunklen Flaschen gelagert.
Insbesondere Verbindungen mit allylischen und benzylischen Wasserstoffatomen sind anfälliger für Autoxidation, da die im Initiationsschritt gebildeten freien Radikale resonanzstabilisiert sind.

Die Oxidation einer organischen Verbindung in Gegenwart von Luft oder Sauerstoff wird Autoxidation genannt. Beispielsweise reagiert Cumol mit Sauerstoff unter Bildung von Hydroperoxid. Die Autoxidation umfasst Initiierungs-, Ausbreitungs- und Beendigungsschritte. Viele organische Verbindungen sind anfällig für Autoxidation – insbesondere Ether in Gegenwart von Sauerstoff, die Hydroperoxide bilden. Obwohl diese Reaktion langsam abläuft, enthalten alte Etherflaschen geringe Mengen an Peroxid, was zu Laborexplosionen bei der Etherdestillation führt und ihre Verwendung gefährlich macht. Auch natürlich vorkommende Fette und Öle wie Pflanzenöl können einer Autoxidation unterliegen. Bei diesen Ölen handelt es sich im Allgemeinen um eine Mischung aus Triglyceriden, die aus drei langen Kohlenwasserstoffketten mit Doppelbindungen bestehen.

Typischerweise wird die allylische Position von Triglyceriden oxidiert, um Hydroperoxide zu bilden, die für den üblen Geruch von Lebensmitteln verantwortlich sind, die ungesättigte Öle enthalten. Folglich haben Lebensmittel mit ungesättigten Ölen eine kurze Lebensdauer, sofern nicht Radikalhemmer eingesetzt werden, um die Radikalbildung zu hemmen. Diese Radikalhemmer wie BHT und BHA werden als Lebensmittelkonservierungsmittel eingesetzt. Sowohl BHT als auch BHA reagieren mit Radikalen unter Bildung resonanzstabilisierter Radikale. Darüber hinaus behindern die tert-Butylgruppen dieser Verbindungen das Radikalzentrum sterisch und verringern die Reaktivität der Radikale. Daher werden diese Radikalhemmer als Antioxidantien bezeichnet, da sie Radikale abfangen und zerstören.

Es gibt auch mehrere natürliche Antioxidantien, die dabei helfen, die Oxidation von Zellmembranen und biologisch wichtigen Verbindungen zu verhindern. Vitamin E und Vitamin C sind beispielsweise natürliche Antioxidantien. Diese Verbindungen reagieren mit den reaktiven Radikalen unter Bildung weniger reaktiver und stabilisierter Radikale.

Autoxidation is the oxidation of an organic compound in the presence of air or oxygen. In this process, compounds such as cumene can react with oxygen to form hydroperoxide. The reaction follows three main stages: initiation, propagation, and termination.

Many organic compounds can undergo autoxidation. Ethers are especially vulnerable when oxygen is present, and they can form hydroperoxides. Even though this reaction is slow, old ether bottles may contain small amounts of peroxide. That is why ether can become dangerous during distillation and may lead to laboratory explosions.

Fats and oils can also autoxidize. Vegetable oil is one common example. These oils are usually mixtures of triglycerides, which are molecules made of three long hydrocarbon chains with double bonds. In many cases, the allylic position of these triglycerides is oxidized to form hydroperoxides. These products help cause the foul smell that develops in foods with unsaturated oils.

Foods that contain unsaturated oils often have a short shelf life unless radical inhibitors are added. Common inhibitors such as BHT and BHA are used as food preservatives. They react with radicals to form resonance-stabilized radicals, and their tert-butyl groups also help block the reactive center. Because they remove radicals, these compounds act as antioxidants.

Natural antioxidants work in a similar way. Vitamin E and vitamin C can help prevent the oxidation of cell membranes and other biologically important compounds. They react with reactive radicals and form less reactive, stabilized radicals.
