L’oxydation des composés organiques en présence d’air ou d’oxygène atmosphérique est appelée auto-oxydation.
Il s’agit d’une réaction en chaîne radicalaire composée d’étapes d’initiation, de propagation et de terminaison.
Dans l’étape d’initiation, un initiateur extrait de l’hydrogène du composé organique pour former un radical centré sur le carbone.
Le radical entre ensuite dans la première étape de propagation, où il se couple avec l’oxygène moléculaire pour former un radical peroxy.
Dans la deuxième étape de propagation, le radical peroxy extrait l’hydrogène d’une autre molécule de composé organique, formant le produit peroxyde et régénérant le radical centré sur le carbone.
Le radical régénéré propage davantage la réaction en chaîne.
Enfin, dans l’étape de terminaison, deux radicaux centrés sur le carbone se couplent pour former un produit non radicalaire.
Généralement, le processus d’auto-oxydation est initié par la lumière. En l’absence de lumière, le processus est très lent. Pour cette raison, la plupart des produits chimiques organiques sont stockés dans des bouteilles sombres.
En particulier, les composés contenant des hydrogènes allyliques et benzyliques sont plus sensibles à l’auto-oxydation car les radicaux libres formés lors de l’étape d’initiation sont stabilisés par résonance.

Radical Autoxidation

L’oxydation d’un composé organique en présence d’air ou d’oxygène est appelée autooxydation. Par exemple, le cumène réagit avec l’oxygène pour former de l’hydroperoxyde. L'autooxydation implique des étapes d'initiation, de propagation et de terminaison. De nombreux composés organiques sont sensibles à l'autoxydation, notamment les éthers en présence d'oxygène, qui forment des hydroperoxydes. Même si cette réaction est lente, les vieilles bouteilles d'éther contiennent de petites quantités de peroxyde, ce qui entraîne des explosions en laboratoire lors de la distillation de l'éther, ce qui rend leur utilisation dangereuse. Les graisses et les huiles naturelles, comme l’huile végétale, peuvent également subir une auto-oxydation. Ces huiles sont généralement un mélange de triglycérides, constitués de trois longues chaînes hydrocarbonées avec des doubles liaisons.

Ces inhibiteurs de radicaux, tels que le BHT et le BHA, sont utilisés comme conservateurs alimentaires. On peut également trouver plusieurs antioxydants naturels qui aident à prévenir l’oxydation des membranes cellulaires et des composés biologiquement importants. Par exemple, la vitamine E et la vitamine C sont des antioxydants naturels. Ces composés réagissent avec les radicaux réactifs pour former des radicaux moins réactifs et stabilisés.

Autoxidation is the oxidation of an organic compound in the presence of air or oxygen. In this process, compounds such as cumene can react with oxygen to form hydroperoxide. The reaction follows three main stages: initiation, propagation, and termination.

Many organic compounds can undergo autoxidation. Ethers are especially vulnerable when oxygen is present, and they can form hydroperoxides. Even though this reaction is slow, old ether bottles may contain small amounts of peroxide. That is why ether can become dangerous during distillation and may lead to laboratory explosions.

Fats and oils can also autoxidize. Vegetable oil is one common example. These oils are usually mixtures of triglycerides, which are molecules made of three long hydrocarbon chains with double bonds. In many cases, the allylic position of these triglycerides is oxidized to form hydroperoxides. These products help cause the foul smell that develops in foods with unsaturated oils.

Foods that contain unsaturated oils often have a short shelf life unless radical inhibitors are added. Common inhibitors such as BHT and BHA are used as food preservatives. They react with radicals to form resonance-stabilized radicals, and their tert-butyl groups also help block the reactive center. Because they remove radicals, these compounds act as antioxidants.

Natural antioxidants work in a similar way. Vitamin E and vitamin C can help prevent the oxidation of cell membranes and other biologically important compounds. They react with reactive radicals and form less reactive, stabilized radicals.
