Classifying Matter by Composition

Z definicji mówi się, że materia jest czysta, jeśli składa się tylko z jednego składnika, o jednolitym składzie w całym tekście. Weźmy na przykład hel. Hel składa się tylko z atomów helu. Podobnie woda składa się tylko z cząsteczek wody. Kompozycje te nie różnią się w zależności od próbki. 
Czyste substancje można podzielić na dwa rodzaje, pierwiastki i związki, w zależności od tego, czy można je rozłożyć, czy nie. 
Pierwiastki to czyste substancje, których nie można rozbić na prostsze substancje za pomocą środków chemicznych. Na przykład hel jest pierwiastkiem.
Związki, wręcz przeciwnie, to substancje, które można rozdzielić na swoje składniki tylko za pomocą środków chemicznych. Na przykład woda, również czysta substancja, może być chemicznie rozkładana na dwie prostsze substancje, wodór i tlen, co oznacza, że jest związkiem. 
Na Ziemi związki są bardziej powszechne niż czyste pierwiastki, ponieważ większość pierwiastków łatwo łączy się z innymi pierwiastkami. W mieszaninie niejednorodnej składniki nie są rozmieszczone równomiernie, a zatem skład zmienia się z punktu na punkt. Na przykład piasek zmieszany z opiłkami żelaza. W tym przypadku różne części tej mieszaniny będą prawdopodobnie zawierały różne ilości opiłków żelaza i piasku. 
Niezależnie od tego, każda mieszanina, zarówno jednorodna, jak i niejednorodna, może zostać rozdzielona na czyste składniki za pomocą środków fizycznych bez zmiany tożsamości składników. Czysta substancja to forma materii o stałym składzie i jednakowych właściwościach. Na przykład każda próbka sacharozy ma ten sam skład i te same właściwości fizyczne, takie jak temperatura topnienia, kolor i słodycz, niezależnie od źródła, z którego jest izolowana.

Mieszanina składa się z dwóch lub więcej rodzajów substancji, które mogą występować w różnych ilościach i mogą być rozdzielane na skutek zmian fizycznych, takich jak parowanie. Składniki mieszaniny zachowują swoją odrębną tożsamość.

<h4>Czyste substancje: pierwiastki i związki</h4>

Czyste substancje można podzielić na dwie klasy: pierwiastki i związki. Czyste substancje, których nie można rozłożyć na prostsze substancje w wyniku przemian chemicznych, nazywane są pierwiastkami. Żelazo, srebro, złoto, aluminium, siarka, tlen i miedź to pierwiastki.

Czyste substancje, które można rozłożyć w wyniku przemian chemicznych, nazywane są związkami. W wyniku tego rozkładu mogą powstać pierwiastki lub inne związki, lub jedno i drugie. Tlenek rtęci(II), pomarańczowe, krystaliczne ciało stałe, można rozłożyć pod wpływem ciepła na rtęć i tlen. Po podgrzaniu bez dostępu powietrza związek sacharozy rozkłada się na na węgiel, wodę oraz inne produkty, takie jak tlenek węgla i dwutlenek węgla. Chlorek srebra(I) to biała substancja stała, którą można rozłożyć na pierwiastki srebro metaliczne i gazowy chlorowodór, pod wpływem absorpcji światła.

Właściwości połączonych pierwiastków różnią się od właściwości w stanie wolnym lub niezłączonym. Na przykład biały cukier krystaliczny (sacharoza) jest związkiem powstałym w wyniku chemicznego połączenia pierwiastka węgla, który jest czarnym ciałem stałym w jednej z jego niezłączonych form, oraz dwóch pierwiastków, wodoru i tlenu, które w stanie niezwiązanym są bezbarwnymi gazami. Wolny sód, pierwiastek będący miękkim, błyszczącym, metalicznym ciałem stałym, oraz wolny chlor, pierwiastek będący żółto-zielonym gazem, łączą się, tworząc chlorek sodu (sól kuchenna), związek będący białą, krystaliczną substancją stałą.

<h4>Mieszaniny: jednorodne i niejednorodne</h4>

Jednorodna mieszanina, zwana także roztworem, ma jednolity skład i wygląda tak samo w całości. Przykładem roztworu jest napój dla sportowców składający się z wody, cukru, barwnika, aromatu i elektrolitów zmieszanych równomiernie. Każda kropla napoju sportowego smakuje tak samo, ponieważ każda kropla zawiera taką samą ilość wody, cukru i innych składników. Należy pamiętać, że skład napoju dla sportowców może być różny – może zawierać mniej lub więcej cukru, środków aromatyzujących lub innych składników, a mimo to będzie napojem dla sportowców. Inne przykłady jednorodnych mieszanin obejmują powietrze, syrop klonowy, benzynę i wodny roztwór soli.

Mieszanina, której skład zmienia się w różnych miejscach, nazywana jest heterogeniczną. Sos włoski jest przykładem mieszaniny niejednorodnej. Jego skład może się różnić, ponieważ można go przygotować z różnej ilości oleju, octu i ziół. Skład różni się w poszczególnych punktach całej mieszanki – jedna kropla może składać się głównie z octu, podczas gdy inna kropla może składać się głównie z oleju lub ziół, ponieważ oliwa i ocet oddzielają się, a zioła osiadają. Innymi przykładami mieszanin heterogenicznych są ciasteczka z kawałkami czekolady (widzimy oddzielne kawałki czekolady, orzechów i ciasta na ciasteczka) i granit (możemy zobaczyć kwarc, mikę, skaleń i inne).

Każdą mieszaninę, jednorodną lub niejednorodną, można rozdzielić na czyste składniki metodami fizycznymi bez zmiany ich właściwości. Chociaż istnieje nieco ponad 100 pierwiastków, z różnych kombinacji tych pierwiastków powstają dziesiątki milionów związków chemicznych. Każdy związek ma specyficzny skład i posiada określone właściwości chemiczne i fizyczne, które odróżniają go od wszystkich innych związków. Oczywiście istnieje niezliczona ilość sposobów łączenia pierwiastków i związków w celu utworzenia różnych mieszanin.

Matter can be grouped by composition into pure substances and mixtures. A pure substance has a constant composition throughout and uniform properties. For example, any sample of sucrose has the same composition and the same physical properties, such as melting point, color, and sweetness, no matter where it is isolated from.

A mixture contains two or more kinds of matter in varying amounts. Its parts can be separated by physical changes, such as evaporation. The components keep their own identities, so the mixture is not a new substance in the same way a compound is.

Pure substances are divided into elements and compounds. Elements cannot be broken down into simpler substances by chemical changes. Iron, silver, gold, aluminum, sulfur, oxygen, and copper are examples of elements.

Compounds are pure substances that can be broken down by chemical changes. This breakdown may produce elements, other compounds, or both. Mercury(II) oxide can be heated to form mercury and oxygen, sucrose can break down into carbon and water when heated without air, and silver(I) chloride can be broken down by light into silver and chlorine.

The properties of combined elements are different from the properties of the elements in their free state. White crystalline sugar comes from carbon, hydrogen, and oxygen, but those elements look very different when uncombined. Free sodium is a soft, shiny metal, and free chlorine is a yellow-green gas, yet together they form sodium chloride, a white crystalline solid.

Mixtures can be homogeneous or heterogeneous. A homogeneous mixture, also called a solution, has a uniform composition and looks the same throughout. Sports drink is one example. It contains water, sugar, coloring, flavoring, and electrolytes mixed evenly, so each drop tastes the same. Its exact composition can still vary and remain a sports drink. Air, maple syrup, gasoline, and salt water are other homogeneous mixtures.

A heterogeneous mixture has a composition that varies from point to point. Italian dressing is one example, since the amounts of oil, vinegar, and herbs can differ and the parts may separate or settle. Chocolate chip cookies and granite are also heterogeneous mixtures because their different parts can be seen.

Any mixture, whether homogeneous or heterogeneous, can be separated into pure components by physical means without changing what the components are. There are just over 100 elements, but they combine in many ways to form tens of millions of compounds. Each compound has a specific composition and its own chemical and physical properties. Elements, compounds, and mixtures can combine in countless ways to make matter.
