Structure of Lipids

Структура липидов

Липиды также являются строительными блоками многих гормонов и являются важной составляющей всех клеточных мембран. Липиды включают жиры, масла, воски, фосфолипиды и стероиды. 
 Общая структура липидов 
 Молекула жира состоит из двух основных компонентов: Глицерина и жирных кислот. Глицерин — органическое соединение (спирт) с тремя углеродами, пятью гидрогенами и тремя гидроксильными группами (OH). Жирные кислоты имеют длинную цепочку углеводородов, к которой присоединена карбоксильная группа, отсюда и название «жирная кислота». Количество атомов углерода в жирной кислоте может быть в диапазоне от 4 до 36. Наиболее распространенными являются те, которые содержат 12–18 атомов углерода. В молекуле жира жирные кислоты присоединяются к каждому из трех атомов углерода молекулы глицерина с эфирной связью через атом кислорода. Соединение трех жирных кислот с глицериновой магистралью в результате обезвоживания образует триацилглицерин. Три жирные кислоты в триацилглицерине могут быть похожими или сходными. 
 Другой распространенный тип липидов – фосфолипид. Это амфипатическая молекула, означающая, что она имеет гидрофобную и гидрофическую часть. Цепи жирных кислот гидрофобны и не могут взаимодействовать с водой; в то время как фосфатно-содержащая группа гидрофильная и взаимодействует с водой. Гидрофильные головные группы фосфолипидов сталкиваются с водным раствор. Гидрофобные хвосты расположены в центре Байера. 
 Жирные кислоты 
 Жирные кислоты могут быть насыщенными или ненасыщенными. В цепи жирных кислот, если в цепи углеводорода есть только одна связь между соседними углеродами, жирная кислота насыщена. Стеарная кислота является примером насыщенной жирной кислоты. 
 Когда углеводородная цепь содержит двойную связь, жирная кислота ненасыщена. Олеиновая кислота является примером ненасыщенной жирной кислоты. Большинство ненасыщенных жиров жидкие при комнатной температуре и называются маслами. Если в молекуле имеется одна двойная связь, то это мононенасыщенный жир (например, оливковое масло), и если в молекуле более одной двойной связи, то это полиненасыщенный жир (например, канолиновая нефть). Длинные прямые жирные кислоты с одинарными связями обычно плотно упаковываются и твёрдые при комнатной температуре. Примерами насыщенных жиров являются жиры животных со стеарной кислотой и палмитической кислотой (обычно в мясе) и жир с бутирической кислотой (обычно в сливочном масле). 
 Жирные кислоты можно дополнительно разделить на СНГ и транс. СНГ и транс указывают на конфигурацию молекулы вокруг двойной связи. Если гидрогены присутствуют в одной плоскости, то это жир снг. Если атомы водорода находятся на двух разных плоскостях, это транс-жир. Двойная связь cis приводит к изгибу или “перегибу”, что предотвращает плотную упаковку жирных кислот, сохраняя их жидкими при комнатной температуре. Примерами ненасыщенных жиров являются оливковое масло, кукурузное масло, канолообразное масло и печень трески. Ненасыщенные жиры способствуют снижению уровня холестерина в крови, в то время как насыщенные жиры способствуют образованию налета в артериях. 
 Транс-Фаты

Lipid molecules are built from hydrocarbon chains and a few key structural parts. Their shape helps explain why they behave differently from many other biological molecules. In high school biology, this structure is often linked to how lipids store energy and help form cell membranes.

Some lipids are made from fatty acids joined to other small molecules. Triglycerides contain glycerol and three fatty acids, while phospholipids contain glycerol, two fatty acids, and a phosphate group. These structural differences give each type a different role in living things.

Fatty acids can also differ from one another. Saturated fatty acids have only single bonds between carbon atoms, while unsaturated fatty acids have one or more double bonds. These bond patterns change the way lipid molecules pack together and help explain their physical properties.
