Chemistry of Carbohydrates

Химия углеводов

Углеводы являются неотъемлемой частью рациона питания людей и животных. Зерновые, фрукты и овощи – это природные источники углеводов, которые обеспечивают энергию организму, особенно глюкозой, простым сахаром, который является компонентом крахмала и ингредиентом многих основных продуктов питания. Стехиометрическая формула (CH2O)n, где n — количество атомов углерода в молекуле, представляет углеводы. Другими словами, отношение углерода к водороду к кислороду составляет 1:2:1 в молекулах углеводов. Эта формула также объясняет происхождение термина «углеводы»: Компоненты – углерод («карбо») и вода («гидрат»). Углеводы можно разделить на простые и сложные. Моносахариды и дисахариды — простые углеводы. Полисахариды — это сложные углеводы. 
 Моносахариды 
 Моносахариды — простые сахары, наиболее распространённые из которых — глюкоза. В моносахаридах количество атомов углерода обычно колеблется от трех до семи. Если сахар имеет альдегидную группу (функциональную группу со структурой R-CHO), то это алдоза, и если у него есть кетонная группа (функциональная группа со структурой RC(=O)R'), то это кетоска. В зависимости от количества атомов углерода в сахарое могут быть триозы (три атомы углерода), пентазы (пять атомов углерода) и/или гексазы (шесть атомов углерода). 
 Галактоза и фруктоза являются другими распространенными моносахаридами. Глюкоза, галактоза и фруктоза являются изомерными моносахаридами (гексосами), то есть они имеют одну и ту же химическую формулу, но имеют несколько разные структуры. Глюкоза и галактоза — это алозы, а фруктоза — кетоза. 
 Моносахариды могут существовать как линейная цепь или как кольцеобразные молекулы. В водных растворах они обычно имеют кольцевые формы. Глюкоза в форме кольца может иметь два разных устройства гидроксильной группы (OH) вокруг аномерного углерода (углерод 1, который становится асимметричным в процессе формирования кольца). Если гидроксильная группа в сахароле ниже углеродного числа 1, она находится в альфа-позиции (α), а если она выше плоскости, то находится в позиции бета (β). 
 <h4>Дисахариды </h4>
 Дисахариды образуют, когда два моносахарида проходят дегидрационную реакцию (или конденсационную реакцию или синтез дегидратации). В ходе этого процесса одна гидроксильная группа моносахарида объединяется с другим водородом моносахарида, высвобождая молекулу воды и образуя ковалентную связь. Это называется гликозидной связью. Гликосидные связи (или гликозидные связи) могут быть альфа или бета-типа. Альфа-связь образуется, когда группа OH на углероде-1 первой глюкозы находится ниже плоскости кольца, а бета-связь образуется, когда группа OH на углероде-1 находится над плоскостью кольца. Наиболее распространенным дисахаридом является сахароза, или настольный сахар, который состоит из глюкозы и мономеров фруктозы. 
 <h4>Полисахариды </h4>
 Длинная цепь моносахаридов, связанных гликозидными связями, — полисахарид. Цепь может быть разветвленной или неразветвленной, и она может содержать различные типы моносахаридов. При снижении уровня глюкозы в крови гликоген разрушается, высвобождение глюкозы происходит. 
 Целлюлоза является самым обильным натуральным биополимером. Целлюлоза в основном состоит из клеточной стенки завода. Это обеспечивает структурную поддержку ячейки.
