Les fruits sont appréciés par de nombreux animaux différents,mais ils ont une fonction importante pour les plantes. Un fruit est le frère mature d'une fleur. Les fruits protègent les graines et servent à la dispersion des graines.
La fertilisation déclenche les changements hormonauxqui initient la transformation de l'ovaire en fruit. En l'absence de fertilisation, les fleurs en généralse flétrissent et ne se transforment pas en fruits. Dans les plantes à graines, la structurequi donne naissance à des cellules reproductrices femellesest appelé l'ovule.
Les ovules se développent généralement en grainesau fur et à mesure que la paroi de l'ovaire se développe dans le péricarpe. Dans un fruit charnu typique, le péricarpese compose de trois couches. La couche extérieure est appelée l'épicarpe,la partie centrale comestible est le mésocarpe,et la graine la plus dure au fond est l'endocarpe.
Dans certains fruits, comme les gousses de pois,le péricarpe est sec à maturité. Dans d'autres fruits, comme les pêches,le péricarpe reste charnu. Les fruits peuvent être classés en fonction de leur mode de développementde carpelles - les parties de fleurs portant l'ovule.
Un fruit formé d'un seul carpel, ou de carpelles fusionnésd'un seul ovaire de fleur, est appelé un simple fruit. Un fruit agrégé, par contre, développede plusieurs carpelles séparés d'une seule fleur. D'un fruit multiple, non de l'autre,est formé des nombreux carpelles de multiples fleurs quiconstituent une inflorescence.
