Una buona malta allo stato plastico possiede una buona lavorabilità e la capacità di trattenere l'acqua.
Una buona lavorabilità consente alla malta di stendersi uniformemente, aderire alle superfici verticali senza cedimenti, estrudere dalle fughe senza cadere e posizionare facilmente le unità in muratura. La lavorabilità della malta è misurata anche dal suo comportamento di scorrimento e dall'adesione a una spatola.
La ritenzione idrica si riferisce all'evitare la perdita di acqua nell'atmosfera o l'assorbimento da parte delle unità in muratura.
La malta si indurisce e perde plasticità, con conseguente forza di adesione alla trazione.
