Herbal Tea Tasting

Herbal Tea Tasting is the sensory evaluation of infusions made from herbs, flowers, spices, or other botanical materials, using smell, taste, mouthfeel, and visual cues to characterize the drinking experience. During tasting, volatile compounds stimulate olfactory receptors, while dissolved chemical compounds activate taste receptors and interact with somatosensory signals such as warmth, astringency, or texture. In behavioral research, controlled tasting sessions can examine how sensory qualities, expectations, and prior experience influence preference, perception, and choice. These observations support consumer studies, botanical product development, quality assessment, and research on how people respond to naturally derived beverages.

Knowledge of molecular mechanisms underlying gustatory transduction has recently enjoyed significant advances, largely due to using animal models. However, the wide diversity in taste sensitivity and specificity among mammals warrants studies in human tissue. We describe a biopsy technique to collect living taste cells from the papillae on human tongue.
