A higher aggregate cement ratio makes the mix leaner. Lean mixes have less cement paste to coat and lubricate the aggregate, so they can be harder to work with. At the same time, they may increase strength because the concrete has less total porosity, or fewer tiny voids.

A lower aggregate cement ratio makes the mix richer. Rich mixes contain more cement paste, which improves workability and cohesiveness. The final strength does not depend on this ratio alone, though. The water to cement ratio also matters and interacts with the aggregate cement ratio to shape the concrete’s consistency and overall properties.
