Porcine Pancreatic Elastase

Porcine pancreatic elastase is a serine protease produced by the exocrine pancreas that hydrolyzes peptide bonds, particularly in elastin and other proteins. As a zymogen, it is activated in the digestive tract, where a catalytic triad of serine, histidine, and aspartate promotes nucleophilic attack on peptide bonds and cleavage of the protein backbone. In biology, purified porcine pancreatic elastase provides a well-characterized system for investigating enzyme specificity, proteolysis, and protease inhibition. It is also used in biochemical assays and studies of extracellular-matrix degradation, helping researchers evaluate protein structure, digestive mechanisms, and compounds that regulate protease activity.

Study of the animal organ physiology can be achieved by performing an experimental ex vivo perfusion system. The addition of a porcine kidney, as a homeostatic organ to our previously developed ex vivo liver perfusion model can be a principal step to achieve a better physiological environment.
