Water Solubility

Water solubility is the ability of a substance to dissolve in water, a property that influences how chemicals move, react, and function in biological systems. Polar and charged molecules generally dissolve when their interactions with water, including hydrogen bonding and electrostatic attraction, offset the forces holding the substance together; nonpolar molecules tend to remain separate. In biology, water solubility affects nutrient absorption, waste removal, drug transport, and the distribution of ions and metabolites in cells and tissues. Understanding this property helps researchers predict molecular behavior, design experiments, and evaluate how compounds interact with living organisms.

This manuscript describes a simple and high-throughput method for assembling water-soluble proteins with hydrophobic pigments that is based on water-in-oil emulsions. We demonstrate the effectiveness of the method in the assembly of native chlorophylls with four variants of recombinant water-soluble-chlorophyll binding proteins (WSCPs) of Brassica plants expressed in E. coli.
