 Diese Chemie auf Zellebene ist durch die Polarität von Wasser möglich, der partiellen positive Ladung der Wasserstoffatome und einer leichten negativen Ladung von Sauerstoff.
 Wenn eine ionische Verbindung wie Salz oder Natriumchlorid vorhanden ist, werden die einzelnen Ionen stärker vom Wasser als voneinander angezogen und bilden Wasserstoffbrücken.
 Jetzt umgibt Wasser die Partikel und bildet eine Hülle, eine Sphäre von Hydratation, die die gelösten Stoffe in eine homogene Mischung namens Lösung verteilt hält.

Ein Lösungsmittel ist ein Stoff, der andere Stoffe auflösen kann. Meistens sind Lösungsmittel Flüssigkeiten. Hier wird die Substanz die gelöst wird als Solvat bezeichnet. Wenn sich ein Lösungsmittel (Solvent) und ein Solvat verbinden, bilden sie eine Lösung, welche auf molekularer Ebene eine homogene Mischung aus Lösungsmittel und gelöstem Stoff ist. Wasser ist ein universelles biologisches Lösungsmittel. Seine polare Struktur erlaubt es, viele andere polare Verbindungen aufzulösen. Die Lösungsfähigkeit des Wasser wird durch ein Gleichgewicht zwischen den Wassermolekülen verursacht, die sich untereinander und mit dem gelösten Stoff verbinden.
 
 Eine gesättigte Lösung enthält die maximale Menge eines löslichen Stoffes. Zum Beispiel löst sich Salz (NaCl) leicht in Wasser auf, wodurch Salzwasser oder Kochsalzlösung entsteht. Es löst sich, weil Salz in seine jeweiligen Ionen Natrium (Na+) und Chlorid (Cl-) dissoziiert. Wasser ist polar und sein Sauerstoffatom, das leicht negativ ist, wird von den positiven Natrium-Ionen angezogen. Mehrere Wassermoleküle können sich an ein einzelnes Natriumion binden, wodurch eine Hydrathülle entsteht. Ebenso sind die Wasserstoffatome des Wassers leicht positiv und werden von den negativen Chlorid-Ionen angezogen. So entsteht wiederum eine Hydrathülle um die Chlorid-Ionen. Diese Hydrathüllen halten die gelösten Partikel getrennt und dispergiert, wobei eine Lösung entsteht.
 
 Eine gesättigte Lösung von Salzwasser enthält bei Raumtemperatur etwa 26% Natriumchlorid. Wird mehr Salz zugegeben, kann der Überschuss nicht mehr gelöst werden und setzt sich am Boden als Niederschlag ab. Der Salzgehalt des Great Salt Lake in Utah (USA) liegt bei 5-27%. Im Toten Meer, das an Israel, Jordanien und das Westjordanland grenzt, liegt der Salzgehalt bei ~34%. Dies ist wesentlich höher als der Sättigungsgrad des Salzes im Wasser. Das überschüssige Salz fällt aus und bildet außergewöhnliche Salzkristallformationen.
 
 Die Löslichkeit eines Stoffes bzw. die Fähigkeit, sich in Wasser zu lösen, ist entscheidend für grundlegende biologische Funktionen. Beispielsweise müssen Proteine und Aminosäuren gelöst werden, um Zugang zu den Zellen zu erlangen. Ebenso sind Natrium-, Chlorid-, Kalium- und Kalzium-Ionen (u.a.) für wichtige Zellfunktionen notwendig. Proteine, Ionen und andere Nährstoffe befinden sich im Blut, das zu ~79% aus Wasser besteht. Die Nieren helfen, die richtige Menge dieser gelösten Stoffe im Blut aufrechtzuerhalten, indem sie sie während der Filtration Stoffe entfernen oder hinzufügen. Dieser Prozess wird Osmoregulation genannt.

Water acts as a biological solvent in many living systems. A solvent is a substance, usually a liquid, that dissolves another substance called a solute. When a solvent and a solute mix, they form a solution, which is a uniform mixture of both parts.

Water is called a universal biological solvent because its polar structure helps it dissolve many other polar compounds. Polarity means that one side of the molecule has a slight positive charge and the other side has a slight negative charge. Water’s ability to dissolve substances depends on a balance between water molecules sticking to each other and sticking to the solute.

A saturated solution holds the maximum amount of solute that can dissolve. Table salt, or sodium chloride (NaCl), dissolves readily in water to make salt water, also called saline. When salt dissolves, it breaks apart into sodium ions (Na+) and chloride ions (Cl-).

Water molecules then surround these ions. The oxygen atom in water is slightly negative, so it is attracted to sodium ions. The hydrogen atoms are slightly positive, so they are attracted to chloride ions. Several water molecules can cluster around each ion and form a sphere of hydration. These hydration shells keep the particles separated and dispersed, which allows a solution to form.

At room temperature, saturated salt water contains about 26% sodium chloride. If more salt is added, the extra salt cannot dissolve. It settles out as a precipitate at the bottom. The Great Salt Lake in Utah has a salt content that ranges from 5% to 27%. The Dead Sea, bordered by Israel, Jordan, and the West Bank, has about 34% salt. That is well above the saturation level of salt in water, so excess salt precipitates and forms striking salt crystals.

Solubility is important for biology because many molecules must stay dissolved to work in the body. Proteins and amino acids need to be dissolved to reach cells. Ions such as sodium, chloride, potassium, and calcium are also needed for cell function. Proteins, ions, and other nutrients stay dissolved in the blood. The kidneys help control the right levels of these dissolved solutes by removing or adding them during filtration. This process is called osmoregulation.
