Carbohydrate Digestion

Die Verdauung von Kohlenhydraten beginnt im Mund während der Mastikation während einige Speicheldrüsen Enzyme freigeben, wie Amylase, welche Stärke zerbricht, in kleinere Zucker, di- und trisaccharide.
 Wenn Zucker den Magen erreichen, passiert nichts weil Amylase inaktiv ist in diesem säurehaltigen Umfeld.
 Wenn sie den Zwölffingerdarm erreichen, werden die restlichen komplexen Kohlenhydrate verdaut vom Enzym alpha-Amylase der Bauchspeicheldrüse.
 Hier, im Darm, werden die di- und trisaccharide weiter zerbrochen in Monosaccharide durch Grenzenzyme der Mikro-Darmzotten.
 Zum Beispiel, das Enzym Sucrase teilt das Disaccharid Sucrose in Glucose und Fructose.
 Diese Monosaccharide werden dann absorbiert vom Darm-Epithel für Energienutzung.

Die Verdauung wird im Zwölffingerdarm des Dünndarms wieder aufgenommen, wo die Alpha-Amylase der Bauchspeicheldrüse und die Bürstensaumenzyme der Mikrovilli komplexe Kohlenhydrate in Monosaccharide umwandeln. Schließlich werden die Monosaccharide vom Darmepithel zur Energiegewinnung absorbiert.
 
 <h4>Arten von Kohlenhydraten</h4>
 
 Drei grundlegende Arten von Kohlenhydraten sind in der menschlichen Ernährung zu finden: einfache Kohlenhydrate, komplexe Kohlenhydrate und Ballaststoffe. Einfache Kohlenhydrate sind Monosaccharid-Moleküle wie Glukose, Fruktose und Galaktose. Komplexe Kohlenhydrate hingegen sind Polysaccharide, die aus langen Ketten von Glukose bestehen. Die Ballaststoffe sind Kohlenhydrate, die in der Zellulose von pflanzlichen Lebensmitteln enthalten sind. Sie können vom Körper nicht zur Energiegewinnung abgebaut werden, spielen aber eine wichtige Rolle für eine gesunde Verdauung. Sie unterstützen die Bewegung der aufgenommenen Nahrung auf ihrem Weg durch das Verdauungssystem.

Carbohydrate digestion breaks food carbohydrates into saccharides, or sugars, that the body can use for energy. It begins in the mouth during mastication, which means chewing. The masticated carbohydrates then pass through the stomach without being broken down further.

Digestion starts again in the duodenum, the first part of the small intestine. There, pancreatic alpha-amylase and brush border enzymes on the microvilli help convert complex carbohydrates into monosaccharides. These simple sugar units are then absorbed by the intestinal epithelium for energy use.

The human diet includes three basic types of carbohydrates: simple carbohydrates, complex carbohydrates, and fiber. Simple carbohydrates are monosaccharides such as glucose, fructose, and galactose. Complex carbohydrates are polysaccharides, which are long chains of glucose. Fiber is found in the cellulose of plant-based foods. The body cannot break fiber down for energy, but it helps healthy digestion by moving food along the digestive system.
