Starch Iodine

Starch iodine is a chemical test and color-forming interaction used to detect starch and study polysaccharide structure. In the presence of iodide, iodine forms polyiodide species that fit within the helical amylose regions of starch, producing an intense blue-black complex; branched amylopectin typically gives a weaker red-brown to violet response. The reaction provides a rapid qualitative indication of starch in foods, plant tissues, and laboratory samples, while changes in color can help monitor starch hydrolysis by enzymes such as amylase. Its simplicity also makes it useful for teaching molecular inclusion complexes, analytical chemistry, and reaction-based identification.

2016

In this study, a protocol was developed to produce good quality pellets using a flat die pellet mill at reduced specific energy consumption testing high-moisture corn stover and a starch based binder. The results indicated that adding a corn starch binder improved the pellet durability, reduced percent fines and decreased specific energy consumption.

Presented here is a procedure for reproducible and statistically valid determinations of starch granule size distributions, and for specifying the determined granule lognormal size distributions using a two-parameter multiplicative form. It is applicable to all granule sizing analyses of gram-scale starch samples for plant and food science research.

Electrophilic Aromatic Substitution: Fluorination and Iodination of Benzene

2023

Bromination and chlorination of aromatic rings by electrophilic aromatic substitution reactions are easily achieved, but fluorination and iodination are difficult to achieve. Fluorine is so reactive that its reaction with benzene is difficult to control, resulting in poor yields of monofluoroaromatic products. To address this, Selectfluor reagent is used as a fluorine source in which a fluorine atom is bonded to a positively charged nitrogen. Unlike fluorine, iodine is highly unreactive for...
