炭水化物は、炭素、水素、酸素からなる化合物です。これらの分子の名前は、炭素ごとに水素原子が2つ、酸素原子が1つある多くの単糖類の経験式に由来しています。
単純な炭水化物は、単糖類と呼ばれるモノマーと二糖類と呼ばれる二量体です。複合炭水化物は多糖類と呼ばれるポリマーです。
単糖類は、その官能基によってアルドースまたはケトースに分類できます。アルデヒド基を持つものはアルドースと呼ばれ、ケトン体基を持つものはケトースと呼ばれます。
単糖類は通常、鎖に3〜7個の炭素原子を含んでいます。各炭素には、カルボニル炭素に最も近い端から1から始まる番号を付けることができます。
糖は非平面の環構造を形成することができ、自然界では主にこの環状の形で存在します。環構造は、カルボニル基が分子の反対側の端にある水酸基と縮合反応によって反応することで形成されます。反応性アルデヒドまたはケトンに結合した炭素は、アノマーカーボンとしても知られています。
これらの炭素-酸素環構造は、アルファとベータの2つのアノマーとして存在することができます。アノマーは、カルボニル炭素での配置が異なる構造異性体です。アルファ型では、アノマー炭素上のヒドロキシル基と環内の最後の炭素上のCH2OH基はリングの反対側に位置し、ベータ型では、それらは同じ側に位置する。
同様の命名規則は、単糖類を他の分子に結合する結合にも使用されます。 
リング構造の下に形成された結合はアルファ結合として知られており、リングの上の結合はベータ結合として知られています。グリコシド結合の名前の数字は、結合に関与する単糖類の炭素数を示しています。
2つの単糖類がグリコシド結合を介して結合すると、二糖類が形成されます。
グリコシド結合は、ある単糖類の水酸基が別の単糖類のアノマー炭素と反応して水分子が脱落したときに形成される共有結合です。
多糖類または複合炭水化物は、共有結合によって一緒に保持された単糖類の鎖です。これらの分子に存在するグリコシド結合の変動により、同じ単糖から異なる種類の多糖類が生まれる可能性があります。
β-1,4-グリコシド結合を介して結合したグルコース分子は、水に溶けない多糖類であるセルロースを形成します。α-1,4-グリコシド結合を介して結合したグルコース分子は、水溶性ポリマーでありデンプンの成分であるアミロースを形成します。デンプンとセルロースは植物に含まれる多糖類です。
グリコーゲンは、グルコースがα-1,4-グリコシド結合とα-1,6-グリコシド結合による間欠的な分岐によって結合した水不溶性分子です。グリコーゲンは、動物の貯蔵多糖類として機能します。

炭水化物は、人間にとっても動物にとっても必要不可欠な栄養素です。穀類、果物、野菜は、エネルギー源となる炭水化物の天然供給源であり、特にデンプンを構成する単糖であるグルコースは、多くの主食の原料となっています。炭水化物を表す化学量論的な式は(CH2O)nであり、nは分子内の炭素数です。つまり、炭水化物の分子では、炭素と水素と酸素の比率が1:2:1となっています。この式は、炭水化物という言葉の由来にもなっています。構成要素は、炭素（ “carbo”）と水（ “hydrate”）です。炭水化物は単糖類と複合糖類に分類されます。単糖類と二糖類は単純な炭水化物です。多糖類は複合糖類ともいいます。
 単糖類
 単糖類は単一の糖であり、最も一般的なものはグルコースです。単糖類の炭素数は通常3～7です。糖がアルデヒド基（構造がR-CHOの官能基）を持つ場合はアルドース、ケトン基（構造がRC(=O)R'の官能基）を持つ場合はケトースと呼ばれます。糖の炭素数に応じて、トリオース（炭素数3）、ペントース（炭素数5）、ヘキソース（炭素数6）とよばれます。
 ガラクトースとフルクトースも一般的な単糖類です。グルコース、ガラクトース、フルクトースは、化学式は同じだが構造が少し異なる異性糖（ヘキソース）です。グルコースとガラクトースはアルドースであり、フルクトースはケトースです。
 単糖類は、直鎖状分子として存在する場合と、環状分子として存在する場合があります。水溶液中では、通常、環状になっています。環状のグルコースは、アノマー炭素（環形成過程で非対称になる1番目の炭素）の周りに2つの異なる水酸基の配置（OH）を持つことができます。水酸基が糖の1番目の炭素より下にある場合はα（α）位、上にある場合はβ（β）位となります。
 <h4>二糖類</h4>
 二糖類は、2つの単糖類が脱水反応（または縮合反応）を起こすことで生じます。この過程で、一方の単糖の水酸基が他方の単糖の水素と結合し、水分子を放出して共有結合を形成します。これをグリコシド結合と呼びます。グリコシド結合にはα型とβ型があります。α型結合は、最初のグルコースの第1位炭素上のOH基が環面の下にある場合に形成され、β型結合は、第1位炭素上のOH基が環面の上にある場合に形成されます。最も一般的な二糖類は、グルコースとフルクトースのモノマーで構成されるスクロース（食卓糖）です。
 <h4>多糖類</h4>
 グリコシド結合で結ばれた単糖類の長い鎖を多糖類といいます。鎖は分岐していても、していなくてもよく、異なる種類の単糖を含んでいてもよいです。分子量は結合しているモノマーの数によって10万ダルトン以上になることもあります。多糖類には、デンプン、グリコーゲン、セルロース、キチンなどがあります。
 植物は、糖をデンプンの形で蓄えています。植物では、アミロースとアミロペクチンの混合物（どちらもグルコースポリマー）がこれらの糖を構成しています。デンプンは、α1-4またはα1-6のグリコシド結合で結合したグルコースモノマーからなります。1-4および1-6という数字は、結合を形成した2つの残基の炭素順位を意味します。
 グリコーゲンは、ヒトをはじめとする脊椎動物のグルコースの貯蔵形態であり、グルコースの単量体から構成されています。グリコーゲンは植物におけるデンプンに相当するもので、通常は肝臓や筋肉の細胞に貯蔵されている高度に分岐した分子です。血糖値が低下すると、グリコーゲンは分解されてブドウ糖を放出します。
 セルロースは、最も天然に豊富に存在する生体高分子です。セルロースは、そのほとんどが植物の細胞壁を構成しています。これは細胞を構造的に支えています。木材や紙はほとんどがセルロース系です。セルロースを構成するグルコースモノマーは、β1～4のグリコシド結合で結ばれています。
