탄수화물은 탄소, 수소 및 산소로 구성된 화합물입니다. 이 분자들은 많은 단당류의 실험식에서 이름을 정했으며 모든 탄소에 대해 두 개의 수소 원자와 한 개의 산소 원자를 갖습니다. 단순 탄수화물은 단당류라고 하는 단량체와 이당류라고 하는 이량체입니다.

복합 탄수화물은 다당류라고 하는 중합체입니다. 단당류는 작용기에 따라 알도스 또는 케토스로 분류할 수 있습니다. 알데히드기를 가진 것을 알도스라고 하고 케톤기를 가진 것을 케토오스라고 합니다.

단당류는 일반적으로 사슬에 3~7개의 탄소 원자를 포함합니다. 각각의 탄소는 카르보닐 탄소에 가장 가까운 끝에서부터 1로 시작하여 번호를 매길 수 있습니다. 당은 비평면 고리 구조를 형성할 수 있으며 자연적으로 대부분이 고리 형태로 존재합니다.

카르보닐기가 축합 반응을 통해 분자의 반대쪽 끝에 있는 수산기와 반응할 때 고리 구조가 형성됩니다. 반응성 알데히드 또는 케톤에 부착된 탄소를 아노머 탄소라고도 합니다. 이러한 탄소-산소 고리 구조는 알파와 베타의 두 가지 아노머로 존재할 수 있습니다.

아노머는 카르보닐 탄소에서 배열이 다른 구조 이성질체입니다. 알파 형태에서는 아노머 탄소의 수산기와 고리에서 마지막 탄소의 CH2OH기가 고리의 반대편에 위치하고 베타 형태에서는 같은 쪽에 위치합니다. 단당류를 다른 분자에 연결하는 결합에 대해 유사한 명명 규칙이 사용됩니다.

고리 구조 아래에 형성된 결합을 알파 결합이라고 하며 고리 위에 있는 결합을 베타 결합이라고 합니다. 글리코시드 결합 이름에 있는 숫자는 결합에 포함된 단당류의 탄소 수를 나타냅니다. 두 개의 단당류가 글리코시드 결합을 통해 함께 결합되면 이당류를 형성합니다.

글리코시드 결합은 한 단당류의 수산기가 물 분자를 제거하여 다른 단당류의 아노머 탄소와 반응할 때 형성되는 공유결합 입니다. 다당류 즉 복합 탄수화물은 공유결합으로 결합된 단당류의 사슬입니다. 이러한 분자에 존재하는 글리코시드 결합의 변화는 동일한 단당류에서 다른 유형의 다당류를 생성할 수 있습니다.

β-1, 4-글리코 시드 결합을 통해 연결된 포도당 분자는 불수용성 다당류인 셀룰로오스를 형성합니다. α-1, 4-글리코시드 결합을 통해 결합된 포도당 분자는 수용성 고분자이이며 탄수화물의 성분인 아밀로스를 형성합니다. 탄수화물과 셀룰로오스는 식물에서 발견되는 다당류입니다.

글리코겐은 α-1, 4-글리코시드 결합과 α-1, 6-글리코시드 결합을 통해 간헐적으로 분지되는 포도당으로 구성된 불수용성 분자입니다. 글리코겐은 동물에서 저장 다당류 역할을 합니다.

탄수화물은 인간과 동물의 식단에 필수적인 부분입니다. 곡물, 과일, 채소는 신체에 에너지를 공급하는 탄수화물의 천연 공급원입니다. 특히 전분의 구성 요소이자 많은 주요 식품의 성분인 단순 설탕인 포도당을 통해 신체에 에너지를 공급합니다. 화학량론적 공식(CH_2O)_n(여기서 n은 분자 내 탄소 수)은 탄수화물을 나타냅니다. 즉, 탄수화물 분자에서 탄소, 수소, 산소의 비율은 1:2:1입니다. 이 공식은 또한 "탄수화물"이라는 용어의 유래를 설명합니다. 구성 요소는 탄소("탄소")와 물("수화물")입니다. 탄수화물은 단순 탄수화물과 복합 탄수화물로 분류할 수 있습니다. 단당류와 이당류는 단순한 탄수화물입니다. 다당류는 복잡한 탄수화물입니다.

단당류

단당류는 단당류로 가장 흔한 것은 포도당입니다. 단당류의 탄소 수는 일반적으로 3~7개입니다. 설탕에 알데히드기(R-CHO 구조의 관능기)가 있으면 알도스이고, 케톤기(RC(=O)R' 구조의 관능기)가 있으면 알도스입니다. 케토스. 설탕의 탄소 수에 따라 삼당(탄소 3개), 오탄당(탄소 5개) 및/또는 육탄당(탄소 6개)이 될 수 있습니다.

갈락토스와 과당은 다른 일반적인 단당류입니다. 포도당, 갈락토스, 과당은 이성체 단당류(육탄당)입니다. 즉, 화학식은 동일하지만 구조가 약간 다릅니다. 포도당과 갈락토스는 알도스이고, 과당은 케토스입니다.

단당류는 선형 사슬이나 고리 모양의 분자로 존재할 수 있습니다. 수용액에서는 일반적으로 고리 형태입니다. 고리 형태의 포도당은 아노머 탄소(고리 형성 과정에서 비대칭이 되는 탄소 1) 주위에 두 개의 서로 다른 수산기 배열(OH)을 가질 수 있습니다. 수산기가 당의 탄소수 1보다 아래에 있으면 알파(α) 위치에 있고, 평면 위에 있으면 베타(β) 위치에 있습니다.

이당류
