Als een ionische stof als zout of natriumchloride aanwezig is, worden de individuele ionen meer aangetrokken door het water dan elkaar en vormen ze waterstofbruggen. Water omringt de deeltjes en vormt een schil. Een hydratatiebol die de oplosstoffen verspreid houdt in een homogeen mengsel dat een oplossing wordt genoemd.

Een oplosmiddel is een stof, meestal een vloeistof, die andere stoffen kan oplossen. De stof die wordt opgelost, wordt een opgeloste stof genoemd. Wanneer een oplosmiddel en een opgeloste stof zich combineren, vormen ze een oplossing - een homogeen mengsel van zowel het oplosmiddel als de opgeloste stof. Water is een universeel biologisch oplosmiddel. De polaire structuur van water stelt het in staat om vele andere polaire verbindingen op te lossen. Het vermogen van water om op te lossen wordt beheerst door een balans tussen watermoleculen die aan elkaar binden en aan de opgeloste stof binden.

Een verzadigde oplossing bevat de maximale hoeveelheid oplosbare opgeloste stof. Bijvoorbeeld, keukenzout, natriumchloride (NaCl), wordt gemakkelijk opgelost in water om zoutwater of zoutoplossingen te creëren. Het lost op omdat zout dissocieert in zijn respectievelijke ionen, natrium (Na+) en chloride (Cl-). Een verzadigde zoutoplossing (bij kamertemperatuur) bevat ongeveer 26% natriumchloride. Als er meer zout wordt toegevoegd, kan het overschot niet meer in de oplossing worden opgelost en wordt het een neerslag op de bodem. Het zoutgehalte van de Great Salt Lake in Utah (VS) varieert van 5-27%. De Dode Zee, die wordt begrensd door Israël, Jordanië en de Westelijke Jordaanoever, heeft een zoutgehalte van ongeveer 34%. Water acts as a biological solvent in many living systems. A solvent is a substance, usually a liquid, that dissolves another substance called a solute. When a solvent and a solute mix, they form a solution, which is a uniform mixture of both parts.

Water is called a universal biological solvent because its polar structure helps it dissolve many other polar compounds. Polarity means that one side of the molecule has a slight positive charge and the other side has a slight negative charge. Water’s ability to dissolve substances depends on a balance between water molecules sticking to each other and sticking to the solute.

A saturated solution holds the maximum amount of solute that can dissolve. Table salt, or sodium chloride (NaCl), dissolves readily in water to make salt water, also called saline. When salt dissolves, it breaks apart into sodium ions (Na+) and chloride ions (Cl-).

Water molecules then surround these ions. The oxygen atom in water is slightly negative, so it is attracted to sodium ions. The hydrogen atoms are slightly positive, so they are attracted to chloride ions. Several water molecules can cluster around each ion and form a sphere of hydration. These hydration shells keep the particles separated and dispersed, which allows a solution to form.

At room temperature, saturated salt water contains about 26% sodium chloride. If more salt is added, the extra salt cannot dissolve. It settles out as a precipitate at the bottom. The Great Salt Lake in Utah has a salt content that ranges from 5% to 27%. The Dead Sea, bordered by Israel, Jordan, and the West Bank, has about 34% salt. That is well above the saturation level of salt in water, so excess salt precipitates and forms striking salt crystals.

Solubility is important for biology because many molecules must stay dissolved to work in the body. Proteins and amino acids need to be dissolved to reach cells. Ions such as sodium, chloride, potassium, and calcium are also needed for cell function. Proteins, ions, and other nutrients stay dissolved in the blood. The kidneys help control the right levels of these dissolved solutes by removing or adding them during filtration. This process is called osmoregulation.
