Post-meal Glucose Spikes

Post-meal glucose spikes are temporary rises in blood glucose after eating, reflecting how dietary carbohydrates are digested, absorbed, and regulated by insulin. Glucose enters the circulation as intestinal absorption increases, while pancreatic beta cells release insulin to promote glucose uptake and limit the duration and magnitude of the increase; the response varies with meal composition, timing, and individual physiology. In pharmacology, monitoring these excursions helps evaluate glucose-lowering medicines, including agents that alter insulin action, secretion, or carbohydrate absorption. Studying post-meal responses supports treatment optimization and improves understanding of metabolic control in diabetes and related disorders.

Eating is a behavior that requires no training or animal manipulation, requires cortical participation, and is not competing with other experimentally induced behaviors, distinguishing this assay from alternative reflex or operant measurements.
