Mass Determination

Mass determination is the measurement of a substance’s mass, a foundational task in chemistry because accurate mass values support quantitative composition, stoichiometry, and preparation. In a typical procedure, a calibrated balance compares the force exerted by a sample under gravity with a reference or internal compensation system, while careful handling minimizes effects from drafts, vibration, temperature, and moisture. Chemists use direct weighing, weighing by difference, and gravimetric methods to determine reactant amounts, product yield, analyte concentration, and molecular relationships. Reliable mass determination therefore underpins solution preparation, reaction analysis, quality control, and reproducible research across chemical disciplines.

We present a protocol for identifying and quantifying the components in mixtures of species possessing similar proteins. Mass spectrometry detects peptides for identification, and gives relative quantitation by ratios of peak areas. As a tool food for fraud detection, the method can detect 1% horse in beef.
