Volatile Headspace Analysis

Volatile headspace analysis is a chemical measurement approach that characterizes compounds released into the gas space above a liquid or solid sample, providing information about composition without directly analyzing the entire matrix. In a sealed vial, volatile molecules partition between the sample and headspace until conditions such as temperature, time, and equilibrium influence their concentration; the collected vapor is then commonly separated by gas chromatography and identified or quantified with a detector or mass spectrometer. In biochemistry, this method supports analysis of metabolic products, aroma compounds, fermentation profiles, and volatile biomarkers. It can reduce sample preparation and help monitor biochemical changes, quality, and process performance.

A rapid method for volatile compound analysis in fruit is described. The volatile compounds present in the headspace of a homogenate of the sample are rapidly separated and detected with ultra-fast gas chromatography (GC) coupled with a surface acoustic wave (SAW) sensor. A procedure for data handling and analysis is also discussed.
