Unsaturated Acids

Unsaturated acids are carboxylic acids that contain one or more carbon–carbon double or triple bonds, giving them chemical properties distinct from saturated acids. Their π bonds can undergo addition reactions, including hydrogenation, halogenation, and hydration, while the carboxyl group participates in acid–base reactions and ester formation; double-bond geometry can also influence molecular shape and reactivity. In chemistry, these compounds provide useful models for studying functional-group interactions and organic reaction mechanisms. Naturally occurring unsaturated fatty acids are important in biological membranes, while industrial applications include producing polymers, surfactants, coatings, and other materials through controlled modification of their reactive carbon–carbon bonds.

We propose a protocol to identify fatty acids without the need to purify them. It combines information on the retention times with the mass spectra of three types of fatty acid derivatives: fatty acid methyl esters (FAMEs), 4,4-dimethyl oxazoline derivatives (DMOX), and 3-pyridylcarbinyl esters (picolinyl).
