Starch Granule Analysis

Starch granule analysis is the biochemical characterization of starch particles to determine their structure, composition, size, and functional properties. It typically combines light or polarized microscopy with measurements of granule dimensions, birefringence, crystallinity, thermal behavior, and the relative contributions of amylose and amylopectin. These analyses reveal how botanical source, processing, hydration, and heating alter granule organization, including gelatinization and structural breakdown. The resulting data help researchers connect molecular architecture with starch digestibility, viscosity, texture, and stability, supporting applications in food science, nutrition, biomaterials, and the development of tailored starch-based products.

Analysis and Specification of Starch Granule Size Distributions

Presented here is a procedure for reproducible and statistically valid determinations of starch granule size distributions, and for specifying the determined granule lognormal size distributions using a two-parameter multiplicative form. It is applicable to all granule sizing analyses of gram-scale starch samples for plant and food science research.

We describe a method for the qualitative and quantitative analysis of stress granule formation in mammalian cells after the cells are challenged with bacteria and a number of different stresses. This protocol can be applied to investigate the cellular stress granule response in a wide range of host-bacterial interactions.
