Fermentation is an anaerobic process that lets microbes make energy from sugar without oxygen or an electron transport chain. It is important in both biology and industry. The process is grouped by the products it makes.

Pyruvate and its derivatives act as key electron acceptors in fermentative pathways. This step helps oxidize NADH back to NAD+, which is needed for glycolysis to keep running. Without NAD+ regeneration, glycolysis would stop and the cell would lose its main source of ATP under anaerobic conditions.

Homolactic fermentation converts pyruvate directly into lactate. Bacteria such as Lactobacillus and Streptococcus use this pathway, and it does not release carbon dioxide. The enzyme lactate dehydrogenase drives the conversion. This type of fermentation is used in food production, including yogurt, sauerkraut, and pickles, where lactic acid adds flavor and helps preserve the food.

Heterolactic fermentation makes lactate, ethanol, and carbon dioxide. Leuconostoc species are examples of heterolactic fermenters. This pathway uses the pentose phosphate pathway and creates a mix of products. It is also used in fermented dairy and vegetable foods, where it helps create distinct flavors and textures.

Alcoholic fermentation is carried out mainly by yeast such as Saccharomyces cerevisiae. In this pathway, pyruvate is first converted to acetaldehyde by decarboxylation and then reduced to ethanol, which also produces carbon dioxide. The carbon dioxide helps bread dough rise, and the ethanol is the alcohol found in beverages made by brewing and winemaking.

Mixed acid fermentation is used by members of the Enterobacteriaceae family. These microbes produce several end products, including lactic acid, acetic acid, formic acid, ethanol, hydrogen, and carbon dioxide. This variety of products helps them adapt to different environments. In microbiology, fermentation end products are also used to help identify bacterial species in diagnostics.
