Beta-sheet Proteins

Beta-sheet proteins are proteins whose three-dimensional structures contain beta sheets, a common secondary-structure motif that helps determine stability and function. In a beta sheet, extended polypeptide strands align side by side, while hydrogen bonds between backbone carbonyl and amide groups hold the strands together; the arrangement may be parallel, antiparallel, or mixed. Beta sheets contribute to the strength and flexibility of structural proteins such as silk fibroin and support binding or catalytic functions in diverse biological molecules. Misfolded beta-sheet-rich proteins can also assemble into amyloid fibrils, making beta-sheet structure important in studies of protein folding, molecular disease, and biomaterial design.

Transcellular protein interactions are important determinants of pancreatic beta-cell function.
