Meat Texture Analysis

Meat texture analysis is the systematic evaluation of meat’s physical and sensory properties, including tenderness, firmness, juiciness, and chewiness. It combines methods such as shear-force testing, compression, texture profile analysis, and trained sensory assessment to measure how muscle structure, connective tissue, moisture, and processing conditions influence resistance to deformation during biting or cutting. In biology and food research, these measurements help relate postmortem muscle changes, protein breakdown, cooking, and preservation to eating quality. The results support product consistency, quality control, processing optimization, and studies of how biological processes shape the properties of animal tissues.

Introducing an Angle Adjustable Cutting Box for Analyzing Slice Shear Force in Meat

Slice shear force is a reference method for beef texture analysis. Using an angle adjustable cutting box could increase its accuracy for research purposes. The results from different locations within the longissimus muscle show a high correlation with Warner-Bratzler shear force methodology and high potential adaptability for different muscles.

Species Determination and Quantitation in Mixtures Using MRM Mass Spectrometry of Peptides Applied to Meat Authentication

We present a protocol for identifying and quantifying the components in mixtures of species possessing similar proteins. Mass spectrometry detects peptides for identification, and gives relative quantitation by ratios of peak areas. As a tool food for fraud detection, the method can detect 1% horse in beef.

Campylobacter is the leading cause of bacterial foodborne gastroenteritis worldwide. Despite establishments enacting measures to reduce the prevalence throughout their facilities, contaminated products consistently reach consumers. The technique developed over the past twelve years addresses limitations of existing methods for isolating and detecting Campylobacter spp. from raw meat.

Microorganisms such as Escherichia coli that contaminate meat products cause foodborne illnesses. The use of essential oils in the meat drying process has not been deeply studied. Here, we present a novel method of applying thyme essential oil to meat during drying to reduce the microbial load in dried meat.
