Extra Virgin Olive Oil Volatilome

The extra virgin olive oil volatilome is the complete profile of volatile organic compounds released from extra virgin olive oil, and it underpins much of the oil’s aroma, flavor, and chemical quality assessment. These compounds arise from cultivar, fruit ripening, processing, and storage, with enzymatic reactions during olive crushing converting fatty-acid-derived substrates into aldehydes, alcohols, esters, and related molecules. Chemists characterize the volatilome using headspace sampling coupled with gas chromatography, often with mass spectrometry or sensory detection, to separate and identify compounds at low concentrations. Volatilome analysis supports sensory profiling, authentication, detection of oxidation or defects, and quality control across olive-oil production.

2019

Here, we present a protocol for a study comparing the efficacy, safety, and delivery of olive-oil-based 3CB and soybean-oil-based CoB formulations in adults requiring parenteral nutrition. The results revealed that olive-oil-based 3CBs is non-inferior and well tolerated compared to soybean formulations.
