Salivary Glands and Saliva

Saliva is composed of 97 to 99.5% water. The remaining proportion includes enzymes such as lipases and amylases, electrolytes, dissolved gasses, IgA, mucin, lysozymes, and metabolic wastes like urea and uric acid.
Saliva primarily functions to dissolve food and initiate the digestion of carbohydrates through salivary amylases.
Additionally, it neutralizes acidic foods and hinders bacterial proliferation in the oral cavity.
The glands that produce saliva are called the salivary glands.&#160;
The intrinsic salivary glands, scattered throughout the mouth, produce minimal saliva.
The extrinsic salivary glands &#8212; parotid, submandibular, and sublingual &#8212; produce most of the saliva.
These extrinsic glands release their secretions through their independent ducts.
The parotid glands, located near the ears, secrete a serous solution rich in salivary amylase.
The submandibular glands, located on the floor of the mouth, release a mucus-heavy liquid with amylase.

The salivary glands, of which there are three pairs known as the parotid, submandibular, and sublingual glands, play a crucial role in maintaining oral health and initiating the digestive process. Positioned near the ears, beneath the masseter muscle, the parotid glands secrete saliva into the oral cavity through the parotid duct of Stensen. Meanwhile, the submandibular glands, located on the floor of the mouth, secrete saliva through channels named submandibular ducts. The sublingual glands, found underneath the tongue, release their secretions via the lesser sublingual ducts.
Saliva, predominantly water (99.5%), also contains 0.5% solutes. These include a variety of ions, such as sodium, potassium, chloride, bicarbonate, and phosphate. Furthermore, saliva contains dissolved gases, and organic substances, including urea, uric acid, mucus, immunoglobulin A, lysozyme, and salivary amylase, a digestive enzyme that works on starch. However, not all glands contribute the same components. The parotid glands, for example, secrete a serous solution heavy with salivary amylase, while the submandibular glands contribute a mucus-laden liquid with a smaller proportion of amylase. The sublingual glands, rich with mucous cells, secrete a thicker fluid with minimal amylase.
Saliva&#39;s water component acts as a solvent for food particles, facilitating taste perception and initiating digestion. Salivary amylase breaks down starch into maltose, maltotriose, and &#945;-dextrin. Buffers in the saliva, specifically bicarbonate and phosphate ions, neutralize incoming acidic foods. Saliva has a pH that ranges from 6.2 to 7.6 with 6.7 being the average pH. Mucus lubricates food in the mouth, assisting in swallowing, while immunoglobulin A and lysozyme work to hinder bacterial attachment and proliferation, although they are not present in sufficient quantities to obliterate all oral bacteria.
Salivation is regulated by the autonomic nervous system. The level of salivary secretion changes significantly, ranging from 1000&#8211;1500 mL daily on average. Under normal conditions, parasympathetic stimulation ensures a continuous moderate flow of saliva, aiding in speech and moistening the mucous membranes. However, during times of stress or dehydration, salivary secretion decreases. The subsequent dry mouth sensation prompts the desire to drink, restoring both oral moisture and overall bodily hydration. The taste and texture of food can strongly stimulate salivary secretion. This response is mediated by taste receptors on the tongue, which send signals to the salivary nuclei in the brain stem. The ensuing parasympathetic impulses stimulate further saliva production, ensuring the mouth is cleansed, and any residual food particles or irritants are diluted and buffered. Even the mere anticipation of food, incited by its smell, sight, or sound, can trigger saliva secretion.

how saliva helps digest food

Salivary glands make saliva and help start digestion in the mouth. The three pairs of salivary glands are the parotid, submandibular, and sublingual glands. They also help keep the mouth moist and support oral health.

The parotid glands sit near the ears and below the masseter muscle. They release saliva into the mouth through the parotid duct of Stensen. The submandibular glands are on the floor of the mouth and send saliva through submandibular ducts. The sublingual glands lie under the tongue and empty through the lesser sublingual ducts.

Saliva is mostly water, about 99.5%, with 0.5% solutes. These solutes include ions such as sodium, potassium, chloride, bicarbonate, and phosphate. Saliva also contains dissolved gases and organic substances such as urea, uric acid, mucus, immunoglobulin A, lysozyme, and salivary amylase. Salivary amylase is a digestive enzyme that acts on starch.

The glands do not add the same mix of substances. The parotid glands make a serous fluid, which is watery and rich in salivary amylase. The submandibular glands make a mucus-containing fluid with less amylase. The sublingual glands have many mucous cells and produce a thicker fluid with very little amylase.

The water in saliva dissolves food particles and helps with taste. It also begins digestion by letting salivary amylase break starch into maltose, maltotriose, and alpha-dextrin. Bicarbonate and phosphate ions act as buffers and help neutralize acidic foods. Saliva usually has a pH between 6.2 and 7.6, and the average pH is 6.7.

Mucus in saliva helps lubricate food and makes swallowing easier. Immunoglobulin A and lysozyme help limit bacterial attachment and growth, although they do not remove all oral bacteria. Saliva also supports speech by keeping the mucous membranes moist. On average, a person makes about 1000 to 1500 mL of saliva each day.

Salivary secretion is controlled by the autonomic nervous system. Under normal conditions, parasympathetic stimulation keeps saliva flowing at a moderate rate. Stress or dehydration can lower saliva production and cause a dry mouth, which can lead to thirst. Drinking then restores moisture in the mouth and helps the body rehydrate.

Taste and food texture can strongly increase saliva flow. Taste receptors on the tongue send signals to salivary nuclei in the brain stem. Parasympathetic impulses then increase saliva production and help wash away food particles and irritants. Even the smell, sight, or sound of food can trigger this response before eating begins.

Digestive System

Content elaboration: The digestive system consists of the gastrointestinal tract (alimentary canal) as well as various accessory organs including the teeth, tongue, salivary glands, liver, gallbladder and pancreas. The digestive system processes and supplies the molecules needed to sustain the living tissues within the body through the absorption of nutrients. Six major functions of the digestive system include secretion, ingestion, mechanical processing, enzymatic digestion, absorption and excretion. The lining of the digestive system protects surrounding tissues from the mechanical and enzymatic stresses of the digestive process. Processes of the digestive system include the mechanical and chemical breakdown of food into small molecules which are then absorbed by the digestive tract. Specific actions within the digestive system include mastication, peristalsis, segmentation and the release of hormones and enzymes necessary for digestion. The metabolic functions of the accessory organs play strategic roles in the breakdown of food products, the maintenance of glucose levels within the blood and the regulation of homeostasis in the body. Indigestible material is excreted as waste. Homeostatic imbalances are explored. These include, but are not limited to, conditions such as gallstones, heartburn, ulcers, dehydration, diarrhea, cirrhosis and cancers of the digestive system. Investigations are used to understand and explain the digestive system in a variety of inquiry and design scenarios that can incorporate evolutionary concepts, scientific reasoning, comparative analysis, communication skills and real-world applications.
